The estate is situated on the foothills of Sierra Mágina, Jaen, Spain, and our centennial olive trees are irrigated by water from mountain springs. Without any doubt, the picual olive owes its fresh flavour to the conjunction of the properties of this water and the Mediterranean climate.
The Arroyovil estate is property of the same family since 1873, reason why the harvesting of olives trees is a part of our culture and a family tradition. For this reasion, we focus all of our effort into achieving an oustanding quality, obtaining a authentic olive juice with a unique aroma and flavour.
To achieve a quality such as ours, we must start with an excellent raw material which requires a very limited use of chemical fertilizers and herbicides, followed by careful harvesting to select the fresh and healthy olives which are used exclusively to produce Conde de Argillo extra virgin olive oil. .
The harvesting starts at the beginning of October, when the olives are still green, and they are ground the same day and cold pressed, in order to avoid the oxidation of the fruit. All the proccess, since the olives are picked until we obtain its olive oil, takes less than 3 hours.
